Summer Salmon Niçoise

Ingredients
  • 8 Tbsp. extra-virgin olive oil, divided
  • 1 lb. skinless salmon fillet
  • Kosher salt
  • Freshly ground pepper
  • 8 oz. green beans
  • 1 cup cherry tomatoes
  • 1 small shallot
  • 1 head of butter lettuce
  • 4 large eggs, room temperature
  • 1 Tbsp. Dijon mustard
  • 1 Tbsp. red wine vinegar
  • A pinch of sugar
  • ½ cup Niçoise or other black olives
Instructions
  1. Arrange a rack in center of oven; preheat to 300°. Pour 1 Tbsp. oil into center of a rimmed baking sheet, then arrange 1 lb. salmon over oil. Season salmon all over with salt and pepper, then drizzle with another 1 Tbsp. oil.
  2. Roast salmon until flesh flakes in the thickest part of the fillet with pressed gently, 30–35 minutes. Meanwhile, fill a medium saucepan three-quarters full with water. Add several generous pinches of salt and bring to a boil, covered, over medium-high heat.
  3. While salmon is cooking and water is coming to a boil, focus on the rest of your salad prep. First, trim stem end off of 8 oz. green beans.
  4. Cut 1 cup tomatoes in half.
  5. Peel and finely chop 1 shallot. Transfer to a medium bowl; set aside.
  6. Separate leaves from 1 head of lettuce and arrange across a large platter. Cover with damp paper towels and chill until ready to serve.
  7. When water is boiling, add green beans and cook until tender but still retain some snap, about 2 minutes. As you wait for the green beans to cook, fill another medium bowl halfway with ice water. Using tongs, remove green beans immediately (but leave boiling water right where it is) and transfer to bowl with ice water. Leave green beans there for 15–20 seconds, or just long enough to chill them completely, then remove from water and pat dry; set aside. Keep the ice water for cooking the eggs.
  8. Add 4 eggs to saucepan and cook exactly 8 minutes. Transfer to ice water bath and let cool 2 minutes. Peel eggs, keeping them submerged in ice bath as you work. Pat eggs dry and transfer to cutting board.
  9. Time to make your dressing: Add 1 Tbsp. mustard, 1 Tbsp. vinegar, and a pinch of sugarto bowl with shallot; season with salt and a generous amount of pepper. Whisking constantly, slowly stream in remaining 6 Tbsp. oil until you have a thick, emulsified dressing.
  10. Remove platter with lettuce from fridge and drizzle with about one-third of dressing. Arrange green beans, tomatoes, and ½ cup olives over lettuce. Cut eggs in half and tuck into gaps on platter.
  11. Using your hands or a fork, flake off large pieces of salmon and arrange over salad.
  12. Drizzle platter with remaining dressing. Season with salt and pepper.

Easy Chicken Salad

  • 4 ounces grilled chicken breast, skin removed
  • 2 cups romaine lettuce, chopped
  • 1/3 cup sliced carrots
  • 1/3 cup chopped cucumber
  • 1/4 cup chopped red onion
  • 1 ounce goat cheese, crumbled
  • to taste Raspberry vinegar
Instructions
  1. Cut the chicken into bite-size pieces.
  2. Toss chicken with the lettuce, vegetables, and cheese.
  3. Add raspberry vinegar and toss again.

Cucumber Salad with Chickpea, Tomato and Broccoli Rabe

1 bunch broccoli rabe
1 15 ounce can chickpeas, drained and rinsed
1 cucumber, diced
1 cup cherry tomatoes, halved
1/2 cup red onion, diced
2 tablespoons dijon mustard
2 tablespoons olive oil
2 tablespoons lemon juice
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
Preparation
  1. Remove the stems of the broccoli rabe and shred leaves.
  2. Blanch broccoli rabe until just tender, about 1 minute. Transfer broccoli to an ice-water bath until cool, then drain and pat leaves dry.
  3. Combine broccoli rabe, chickpeas, cucumbers, tomatoes, and red onion in a bowl.
  4. In a small bowl mix mustard, olive oil, lemon juice, salt, and pepper until well combined.
  5. Pour over salad, toss until coated, and enjoy, or store in fridge to have throughout the week!

Berry Quinoa Salad

1 cup cooked quinoa
1/2 cup olive oil
1-2 limes fresh squeezed lime juice
to taste freshly ground black pepper
1 cup blueberries
1 cup sliced strawberries
1 cup sliced peaches
6 cups spinach
​Instructions
  1. Drizzle cooked quinoa with olive oil and lime juice; toss with fork to separate grains and season with pepper to your liking.
  2. Add blueberries, strawberries, and peaches to quinoa and toss lightly.
  3. Serve quinoa mixture on top of spinach.

Grilled Watermelon, Avocado, and Shrimp Salad

  • 1 lb. peeled and deveined shrimp
  • 3 lb. watermelon, cut into 2-inch wedges
  • 3 spring onions, trimmed, green parts thinly sliced, white parts left whole
  • 2 avocados, peeled, pitted, and cut into 1/2-inch wedges
  • 5 tbsp. olive oil
  • Kosher salt and freshly ground black pepper
  • 2 lemons, zested and juiced
  • 1⁄2 cup basil leaves
  • 1⁄2 cup mint leaves
  • 1 English cucumber, cut into 1/2-inch pieces
Instructions
  1. Light a grill; thread shrimp onto skewers. Brush shrimp, watermelon, white parts of spring onions, and avocados with 3 tablespoons oil; grill, turning once, until charred, about 4 minutes for shrimp, 7-8 minutes for watermelon, and 2-3 minutes for scallions and avocados. Season with salt and pepper and transfer to a platter.
  2. Remove watermelon rind and cut into 1-inch pieces; place in a large bowl. Remove shrimp from skewers and add to bowl with watermelon; cut spring onions into 1-inch pieces and add to bowl. Add spring onion greens, avocados, remaining oil, salt, pepper, lemon zest and juice, basil, mint, and cucumber and toss carefully to combine; transfer to a serving platter.

Roasted Beet and French Lentil Salad with Capers and Walnuts

  • 2 medium red beets, peeled and cut into 1/2-inch cubes or wedges*
  • 1 Tbs. extra virgin olive oil
  • fine sea salt and fresh black pepper, to taste
  • 1/2 cup French lentils
  • 1 bay leaf (20-25 minutes, add big pinch salt at last 5 minutes)
  • 4 cups water
  • 2 Tbs. olive oil
  • 2 Tbs. red wine vinegar
  • 1 tsp. honey
  • fine sea salt and fresh black pepper, to taste
  • 2 Tbs. capers, drained
  • 1/2 cup walnuts, toasted + chopped
  • 1/4 cup chopped fresh parsley
  • 2-3 big handfuls arugula or baby kale, for serving
Instructions:
  1. Preheat oven to 400 degrees and line a sheet pan with parchment paper. 
  2. Toss cubed beets with olive oil and a good pinch of salt and pepper. Roast for 30-35 minutes, tossing halfway through, until brown around the edges and the interiors are just tender. 
  3. While the beets are roasting, add lentils, water and bay leaf to a medium saucepan. Bring to a boil, then reduce heat to medium. Cook for 20-24 minutes until the lentils are just tender, but not mushy. At the 15 minute mark, add a good pinch of sea salt. Drain well and remove bay leaf. 
  4. To assemble the salad, add olive oil, red wine vinegar, honey, a pinch of salt, and several grinds black pepper to the bottom of a large mixing bowl. Whisk until well incorporated. Add the warm lentils and beets, tossing gently to coat. Then mix in the capers, walnuts, and parsley. Taste and adjust seasoning as needed. 
  5. Serve salad warm or room temperature on a bed of arugula or baby kale.
  6. For lunches, transfer salad to individual containers - topping each serving with a handful of greens.
  7. This salad will keep for several days in the fridge and gets better as it sits.

Summer Vegetable Salad

4 ounces shrimp, steamed
1 1/2 cups Romaine lettuce and baby spinach
1/2 cup string beans, blanched
1/4 cup grape tomatoes, sliced into halves
1/4 cucumber, chopped
2 artichoke hearts, sliced into quarters
1/4 cup sliced into 1/2 inch pieces hearts of palm
1/4 cup thinly sliced radishes
1/4 avocado, sliced
1 tablespoon red wine vinegar
1 teaspoon olive oil
1/4 lemon freshly squeezed lemon juice
to taste sea salt
to taste freshly ground black pepper
​Instructions
  1. Toss all ingredients together.
  2. Mix vinegar, oil, lemon juice, salt and pepper and pour over salad.

Strawberry, Avocado & Arugula Salad

  • 2 cups quartered strawberries
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons honey
  • 1½ tablespoons white wine vinegar
  • ¼ teaspoon salt
  • 1 (5 ounce) package fresh baby arugula
  • 1 avocado, halved, seeded, peeled and chopped
  • ½ cup thinly sliced red onion
  • ¼ cup crumbled reduced-fat feta cheese (1 oz.)
Preparation​
  1. For dressing, in a blender combine 1 cup of the strawberries, the oil, honey, vinegar and salt. Cover and blend until smooth. If desired, cover and chill up to 48 hours.
  2. Arrange arugula on a large platter. Top with the remaining 1 cup strawberries, the avocado and onion. Before serving, drizzle with dressing and sprinkle with cheese.

Pad Thai Zucchini Noodle + Quinoa Salad

  • 1 medium zucchini
  • 1 cup shredded cabbage
  • 1 cup sliced red bell pepper
  • 2 scallions thinly sliced
  • 1/4 cup chopped cilantro
  • 1/2 cup cooked quinoa
  • 1/4 cup dry roasted peanuts
  • for the sauce:
  • 2 tablespoons creamy peanut butter or almond butter
  • Juice of 2 limes
  • 2 teaspoons gluten-free tamari
  • 1 teaspoon sriracha sauce or asian hot sauce of choice
  • 1/2 teaspoon ground ginger
  • Water as needed to thin the sauce
Instructions
  1. Slice the ends off the zucchini and secure it to your spiralizer. Spiralize the zucchini into long noodles and transfer to a large bowl.
  2. Thinly slice the cabbage and pepper, either with a knife or mandolin slicer, and add that to the bowl with the zucchini noodles, along with the scallions, cilantro, quinoa and peanuts.
  3. In a small bowl, whisk together dressing ingredients. Add water, 1 tablespoon at a time, until it's thin enough to pour -- you're looking for the consistency of a creamy dressing.
  4. Pour dressing over the vegetables and toss to coat. Transfer to two bowls, sprinkle with a bit more peanuts and cilantro and enjoy!

Chicken, Sweet Potato, and Coconut Stew

  • For the Spice Mixture:
  • 1/4 cup freshly squeezed orange juice
  • 1 TB paprika
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground tumeric
  • 1/4 tsp cayenne (less if you’re sensitive to spice)
  • For the Stew:
  • 3 TB coconut oil
  • 1 large onion, chopped
  • 2-inch piece fresh ginger, peeled and minced
  • 8 cloves fresh garlic, chopped
  • 1 can (15 oz) diced tomatoes and their juices
  • 1/2 cup unsweetened, whole coconut milk from a can (shake well)
  • 2 cups regular chicken broth
  • 1 lb sweet potatoes, peeled and cut into 1/2 inch pieces
  • 2 lbs boneless skinless chicken thighs, towel-dried and cut into bite size pieces
  • kosher salt and freshly ground black pepper
  • Garnishes: chopped cashews, unsweetened coconut flakes (garnishes highly recommended for texture and depth of flavor.)
​Instructions
  1. In a bowl, combine all ingredients of Spice Mixture together until well incorporated. Set aside.
  2. In a Dutch Oven or large/heavy pot, add 2 TB coconut oil and heat until hot. Add onions and cook/stir over medium heat until softened, 4 minutes. Add ginger and garlic, continuing to stir another 2 minutes. Add the Spice Mixture that was set aside. Stir well for 1 minute.
  3. Add tomatoes plus their juices and coconut milk. Stir frequently 2-3 minutes. Add broth and 1/2 tsp kosher salt. Bring to a simmer for 10 minutes. Add sweet potatoes, stirring occasionally; cook until tender, 20 minutes. Taste stew; if needed, add more kosher salt and freshly ground black pepper.
  4. Meanwhile (while stew is cooking) heat 1 TB coconut oil in a large saucepan over medium high heat. Sprinkle chicken with 1/2 tsp kosher salt and 1/4 tsp freshly ground black pepper. Place chicken in a single layer in saucepan and let brown for 4 minutes on first side. Flip with tongs for 3 minutes of browning on second side. Do this in 2 batches if needed to avoid overcrowding (if crowded, chicken won’t brown.) Add browned chicken to the hot stew; stir to combine.
  5. Serve stew with garnishes, over rice or just as is.
